Tuckaway Farm’s eggs are sold locally, by subscription. In 2009, we hope to have a surplus of produce to sell locally as well. This year, we established a vineyard, large enough, we hope, to provide red wine for our household.

Eggs
Our flock of Buff Rock hens is raised in the fresh air and sunshine, nourished with a combination of healthful feed and their own foraging. They produce clean, large brown eggs with clear, firm whites and bright yellow yolks.

Produce for the Authentic Italian Kitchen
Tuckaway Farms produces early tomatoes, the popular Jet Star, delicious for salads and also meaty enough to be used in sugo al pomodoro (tomato sauce). In August, the heirloom Pruden’s Purple are ready for eating. August and September also bring the renowned San Marzano plum tomatoes, perfect for cooking into fresh sauces and for canning.

Agretti and puntarelle are greens well-known in central Italy, but little known in the United States. These Italian greens make wonderful salads and side dishes.

More well-known is “arugula” (actually la rucola in Italian). We grow both the familiar cultivated variety, and the “wild” variety, which is far more peppery. (Since we produce it from seed, is it really wild?)

And, of course, any kitchen depends on various other salad greens, including Red Romaine, Buttercrunch, Rouge d’Hiver, Brun d’Hiver, Sucrine, and endive. We also produce a range of more typically New England vegetables, and we will sell our surplus locally in 2009.

All Tuckaway Farm produce is raised using natural fertilizers and pest control.
